Ceylon Cinnamon

Cinnamomum verum is cinnamon traditionally grown on the island of Sri Lanka. Different from its relation cassia to the east by the softer flavor and species, Ceylon Cinnamon is a mixture of sweetness, cinnamon, citrus, and earthy flavors. The delicate richness of ‘True’ Cinnamon is a pleasure to use in combination with other ingredients that share its flavors. Though Ceylon is a ‘dead’ country name, the use continues. “True” also has connotations denoting its role and culinary western consideration and was favored by western culture as a ‘superior’ product, which is largely based on cultural preference.

The first entry in The Societies’ Library, Ceylon Cinnamon Syrup is the standard for Colonel Tiki and almost all recipes that call for Cinnamon Syrup are built around Ceylon as a flavor tent-pole.
